Dinner Challenge

My friend Sharla posted a challenge on her blog to keep track of dinner menus for a week to help her and others come up with new ideas for dinner. Since I did my cooking yesterday, it seemed like a good time to participate in a challenge! I usually cook several meals about every other week, then put them in individual-serving containers and freeze them. My menu is dependent on what comes in the box of organic fruits and vegetables that gets delivered to my doorstep every other Monday. I find out what's in the box (I don't have much control over it) and then find recipes to use everything up.

So here's what's on the menu for the next few weeks:
Baked Potato Soup
Steak Tacos with Cucumber Avocado Salsa
Greek Green Beans
Baked Macaroni and Cheese (I added tomatoes)
Sourdough Pancakes
Mango Crisp

Awesome, I can't wait to try some of those. I was wondering if you could also post your recipe for the artichokes and turkey meatballs that you made when we came to visit. I think you said it was Weight Watchers? I loved it and I think Chad would too!

All of those recipes sound so good. I need some new meals. I feel like I make the same things every week!
How's your ghost friend? We just watched Poltergeist last night. I hope you don't live with one of those!

Mango crisp sounds YUMMY! Wish I had some mangos. Maybe I'll make it with peaches. I have some of those. By the way, we sold our first item on ebay last week! WooHoo! Thank you for your help.
